Which of the crownprincesses does an excellent job? Who is the best ambassador for her country?

I quite agree with your list. Máxima, Victoria and Mette-Marit work hard and do their best for the country, allthough they had their share of scandals. 
Mathilde is good Crownprincess too, but she would be perfect if she worked on her Dutch (essentially getting rid of the French accent. I don't think she has problems grammar-wise) and getting specialized in some more areas, not only micro-finance and children and the elderly. (I have the idea Máxima is more involved in micro-finance than Mathilde). But Mathilde does a good job. Hardly any scandal, which is also important.

I don't know enough of Letizia and Mary to comment, but I do know that these two really have two groups of followers: "lovers" and "haters". Something the other princesses don't have.
